Broccoli Flower Soup

Outside it is cold and bleak. What is better than warming yourself up with a delicious cup of soup? This Broccoli Soup with Edible Flowers not only tastes delicious, it also looks fantastic.

Ingredients

  • 1 large broccoli
  • 1 onion
  • 2 cloves of garlic
  • 1.5 liter vegetable stock
  • Bacon cubes
  • Black pepper to taste
  • Fresh parsley
  • Edible flowers, preferably white flowers in combination with green leaves.

Preparation

  1. Finely chop the onion and garlic.

  2. Heat some olive oil in a large soup pot over medium heat. Sauté the onion and garlic.
  3. Cut the broccoli into florets. Add the broccoli to the pan and fry briefly with the onion and garlic.
  4. Pour the vegetable stock into the pan and bring to a boil. Simmer until the broccoli is tender, about 15-20 minutes.
  5. Use a hand blender to puree the soup until smooth.
  6. Fry the bacon cubes in a frying pan until well done. Add the fried bacon cubes to the soup.
  7. Season the soup with black pepper.
  8. Serve the soup garnished with fresh parsley and edible flowers.
